La Distillerie is one of the most famous fine-dining restaurants in the country Luxembourg. The beauty of the small country between Belgium-Germany and France makes a trip to Luxembourg definitely worthwhile. Few restaurants even ensure an amazing culinary journey, like La Distillerie. The Restaurant is located inside the castle ‘Château de Bourglinster’ that can be found in the picturesque town of Bourglinster in the southeast part of Luxembourg.

The beautifully restored castle ‘Château de Bourglinster’ dates from the 12th century and can be visited upon request. The castle has two restaurants and diverse banqueting facilities. First there is the Gourmet restaurant La Distillerie and next door you will find ‘Brasserie Côté Cour. Managing director Selim Schiltz supervises the total project.

A walk around the village of Bourglinster to viewpoints in the forest and historical sights is a great activity before or after a meal at restaurant La Distillerie. When arriving at the castle guests enter through the impressive bridge and gate, which sets the atmosphere for a memorable authentic experience. Both restaurants have their entrance on the main square inside the castle. The interior of La Distillerie is characterized by the antique style that is found everywhere throughout the castle. Classic white linen, comfortable tables & chairs and atmospheric lighting enhance the comfort.

The guide Gault&Millau elected Chef René Mathieu Chef of the Year 2010 for Luxembourg and since 2012 he also has a Michelin star. His kitchen philosophy truly respects the ingredients and the environment. Every day, he goes out foraging in the woods just next to the castle, where he finds many herbs and vegetables for his kitchen.

The chef gets inspiration from the beautiful surrounding and that is translated into his creative dishes. Nature is related to a light and healthy cuisine, which are indeed two other aspects that characterize his cuisine.

The chef uses few modern techniques to create dishes focussed on herbs and vegetables. René Mathieu’s tasting menus are the best way to get a good idea of his kitchen. One can choose between a vegetarian menu and a menu where the chef adds meat, fish and poultry. Unlike most other restaurants, the chef uses his meat or fish as a kind of side product and the vegetables are always the essence of his dishes.

Biscuit with smoked hill fish, sesame and a sponge cake of wild herbs.

Mackerel fish cooked with salt & coffee

The first course was an asparagus selection with black sesame, a espuma of white asparagus, fermented emulsion and herbs.

Lobster came with a lemon velouté with fresh herbs, different mushroom variations and mushroom powder, a delicious ravioli with herb cheese and the dish was finished with mushroom juice.

Turbot slow cooked with a turbot skin cracker, fennel en onion structures. Finished with lemon caviar on top.

The foie gras was cooked on pine and served with a millefeuille salad with duck and a juice with pine and orange.

Lamb rack, turnip, radish, red beetroot, green olives, herbs from the field and smoked mugwort juice.

Strawberry panna cotta, pomegranate, jasmine ice cream, rose, vanilla, orange blossom and patchouli.

Le monde des douceurs: Cherry, pistachio and ice cream of verbena and cherry juice.

Chocolat variations with violet.

Embrace the passion for herbs, wild flowers and plants, which embellishes the majority of René Mathieu’s dishes. Each dish is a work of art and contains a philosophy of focus on the nature.
