Restaurant Neige d’été is owned and run by the Japanese chef Hideki Nishi. Neige d’été, which means summer snow, is located in the 15th district of Paris with easy subway access.Neige d'été - Paris
Hideki, a Japanese chef full of passion, spent fifteen years in the George V kitchens before opening this charming little gastronomic gem. Bringing back the link to the snow the interior was designed with a lot of clear colours. The elegant decor, signed by Atelier ES (see also Passage 53), creates a very zen atmosphere. Shortly after opening Hideki got a lot of positive feedback in the blog scene and earlier this year he was awarded his first Michelin star. On the prestigious website OAD, Neige d’été is now listed amongst the candidates for ‘Best New European Restaurants’.Neige d'été - ParisWe had the pleasure to taste a stunning tasting menu in great company. Hideki offers French dishes in the same spirit as the interior. He only works with the finest ingredients and his food is pure, intense, refined and always executed with this typical Japanese delicacy. Crispy sweetbread was served on a tartar of oysters and walnuts which made it an excellent combination.Neige d'été - Paris

Millefeuille of eel and foie gras with a cream of quince. A bit to thick but with a nice flavour depth. This dish was paired with an excellent Folio 2014 from Coume del Mas in Collioure.Neige d'été - Paris

A tender piece of monkfish was served in a delicious lobster consommé with cepes and fresh herbs.Neige d'été - Paris

Grilled guinea fowl was nicely seasoned and served with white truffle and mashed potatoes from Bretagne. Great pairing also with the La Monceau, a rich Chardonnay 2012 from Domaine Labet, Cotes du Jura.Neige d'été - Paris
