Restaurant Babel, part of the M15 group (also Kiosk’ and ‘Terasz’), is located in the city centre of Budapest near the Inner-City Parish Church (Belvarosi Plebania Templom). Babel, Kiosk and Terasz are housed in the same beautiful and impressive former-Piarist building, only a few minutes away from the Danube River. The group transformed it into a multifunctional space and a true metropolitan meeting hub where gastronomy and nightlife meet daily.

Restaurant Babel is the gastronomic restaurant of the group and one of the most creative of Budapest. It focuses on Hungarian regional cuisine with a modern touch. The interior is elegant with a lot of glass elements, blazing mood lighting, warm colours and trendy music. Interesting at restaurant Babel is that Hungarian designers make all design elements, even the plates and glasses.

Chef Istvan Veres originates from Transylvania and gained experience at L’Arpège Paris, Patrick Guilbaud Dublin, L’Ortolan London and in restaurant Maze from Gordon Ramsay in London. His kitchen style gets inspirations from several local traditions but he created dishes that match today’s international fine dining expectations. Most of the raw ingredients come from Hungary to stimulate local business. He keeps simplicity in his combinations and prepares very original combinations that focus on flavour intensity and synergy.

In the four or six course tasting menu from the chef you will experience his way of Transylvanian innovation. The wine list composed by sommelier Péter Blazsovsky features a unique selection of more than 140 Hungarian wines. He serves guests interesting and often surprising wine pairings.

Bread & butter selection

Fermented grape leaf with fermented mushroom and smen (butter & blue cheese).

Potato ball filled with fermented cabbage inside, crunchy butter and parsley.

Scallops, kohlrabi, sweet lemon cream, watercress and kohlrabi granite.

A chicken liver parfait was served with beer chips and apple.

Example of Veran’s philosophy is his preparation of the traditional ‘Egg Galuska’: a base of Hungarian pasta with truffle and topped with egg foam. The dish is finished with dried and salted egg yolk and compressed salad. Sommelier Blazsovsky pairs this dish with an excellent Harslevi semi dry wine from Olaszliszka in the Tokaj region.

Smoked trout came with fermented radish and crunchy herbs.

Mint, basil, tarragon to crush yourself at the table, topped with a green apple sorbet.

Lamb neck was served with mashed vegetables with whey, lavender, homemade cheese and a cracker of milk skin. In the glass a surprising furmint with lavender notes to match the dish.

Dessert ‘bikers gorge’: pine, carrot, celery and yoghurt.

Snow white: Biscuit, rhubarb chutney, elderflower cream and tomato powder.

Babel’s modern interpretation of regional cuisine is attractive, light and creative.
